does anyone know if the width vs. height matters for pots. For example would a 2 foot wide by 1 foot deep pot be better than a 1 foot wide and 2 foot deep pot. I am wondering could i get a 3 gallon pot that was no more than 1 foot wide (vertical is not an issue) and would this be fine for root growth.

Well cannabis grows with a tap root so depth is the only thing you need to worry about. You should be fine.

hmm i might experiment with this sometime as it could greatly increase the number of plants i have in my growspace. I wonder if there is a minimum width though...

Don't know alot about this but I guess when growing in the ground vs pot you always get a bigger plant. I read somewhere cannabis plants don't like having their roots restricted. My dumb madeup theory is deep pot = tall plant, wide pot = bushy plant.
Probably no merit to this theory at all. My only suggestion is square pots may help if you want to maximise grow space.
