seltzer water is a waste of time, unless you water the plants with it, which may not be wise. yeast and sugar water is your best bet, and you'd be alright if you found the ballance.

leaves don't open. you mean stomata. and the reason there is no exchange is because:

light+chlorophyl+co2=photosynthesis.

if one of these key ingredients is missing, there will be no photosynthesis, and no co2 exchange. using yeast and sugar, it's irrelevent; co2 will be generated constantly, and cannot be stopped. the good side of this is the abundance of co2 when the lights come on.
