I should start checking and recording my PH daily and find out how much it changes over 5 days unchecked.

probably, just make sure you test with the same nute mix that will be in the tank while it is unchecked. For Example, you dont wanna test you veg nutes now, if you will be switching to flower by then. I'm sure the two will act differently.
