Perhaps your hunch on the fan being too strong was correct? And lets see, 80 degrees plus CO2, your plants were probably transpiring quite rapidly, plus excess moisture being stripped by an overly strong fan... hm... I have never encountered this problem before so I can't tell you much. Maybe increasing the humidity WOULD help! How was water use? Hmmm, I wonder if an anti-transpirant such as wiltpruf or neem might help?
This is going to sound a bit shitty and time consuming, but if I had a grow that wasn't working, I'd go back to the setup I used for the last successful grow, and try fiddling with variables, adding things in one at a time... I'd also try getting your night temps up to at least 65, because you don't want to have a great difference between night and day.
