Can I freeze the balls and save them to make seeds?

Yes.
The guy at my local shop recommends mixing pollen with flour and saving it... a tiny bit goes a long way. A deep freezer is better than one with auto-defrost btw.
Still, get them out of the room so future crops are not affected.
