what you need
1 pkg of flank steak, or cube steak. (any cheap cut of steak will do)
1 carton of buttermilk
1 bottle of hot sauce
1 cup flour
1 cup corn meal (corn muffin mix works too)
oil for frying

Take the steaks out and place them inbetween 2 peices of plastic wrap. using a wooden mallet, or a can of somthing, beat the steak from the inside to the edges, kinda like rolling out a dough. Your looking for a thin flat piece, try not to beat holes into it. Place the meat into a zip lock bag, with the butter milk, and half the bottle of hot sauce. (if you like it hot put the whole thing in). leave this for at least 3-4 hours in a fridge just so the meat, and the milk have time to mingle.
In a big bowl combine the flour,corn meal, and some salt and pepper. get the pan ready with the oil on med high. Once the oil is going take out the steak and coat with the flour mix and go right into the pan. once the outside is golden brown the inside is done.
