I'd say the best way to handle this is to talk with her and try to reach a compromise or make a deal with her. You can also try to address some of her concerns and talk about them. Ease her worries. Whatever you do, don't just do something she clearly told you not to. It's not worth losing her trust or respect.

But i'd explain to her that if you grow in the greenhouse during the warmer times, that its actually more risky than growing indoors. If she was ok with the greenhouse, she's going to have to be ok w/ an indoor grow.

The other thing you could do is buy a cabinet, or build one, for your grow and keep it somewhere out of the way. Attached garage, spare bedroom or something. Also tell her its cheaper to grow it than buy it, so you're saving you both money for a vacation together. Hell, sell some of your weed and take her out
