Well according to the Food Saver folks, their plastic bags are non permeable, meaning no air gets in or out. I can sorta testify to that being a fact. My above post about long term storage underground with a vac sealer was my evidence. The bag was still tight and hard after 3yrs with zero air leakage. Like i said, hard as a rock.
I have tried this same method a few other times, just as an experiment, and now and then i find a bag that apparently leaks a tiny bit, and after some months go by, its obvious that some air has gotten in somehow by the fact that the bag is not as tight as when 1st stored. Thats pretty rare tho, and consider that vac sealing in small amounts is considered "dog proof" for the most part.
I'm sure not knockin' the mason jars. we use them too!! Its sometime hard to cram some of the bigger stuff into a jar without smashing most of the trics, both going in and being pulled out. I can get about 1oz in a quart size jar and when there is a good amount of stuff to jar, it can take a couple boxes of jars and lids to fit it all in. Anyway, good luck
