Who likes to grill? Post your favorite recipies!
Well, back in school this semester so I'm back in an apartment and I finally decided that I'd rather cook than buy food to save money. Turns out I'm a badass cook and I didn't even know it lol. I just started grilling a month or so ago and I've been doing it ever since. Nothing like a gravity bong, a bunch of friends and a grill to turn eating dinner into an event :rasta:
Well, this isn't really a recipie so much as something you buy at the store but that McCormicks Chipotle Pepper marinade (a little packet, 88 cents at wal-mart) is badass.
Badass Chipotle Chicken
Ingredients:
1 packet McCormick's Chipotle Pepper marinade
1 3/4 cups water
3 tbs olive or vegetable oil
2 lbs chicken (i used boneless skinnless chicken breasts)
Preparation:
Defrost your chicken and mix your marinade up in a big bowl. Dip the chicken in the marinade and rub the seasoning into the chicken with your hands, kinda massaging it in with your fingers. (That's the secret to getting it to have flavor all the way through, according to my grandpa

Make sure you rub it into both sides really well. Then cover it in foil and set it in the fridge overnight.
Cooking:
I prefer charcoal, so I dunno what to tell you about gas. For this chicken make sure you let the charcoal burn all the way down till its covered in ash and glowing. Put foil over the grill and throw your chicken on top. Use a brush to baste it with as much of the marinade left in the bowl as you see fit. Poke a few holes in the foil near the chicken to let some of the juice drain through and let a little of the smoke up. Cook for about 5 minutes per side, and then flip it back and forth til its done to your liking.
Both times I've made it it came out perfect and juicy all the way through

Hmm I remember 4th of July I was home alone. I invited over some buddies and started drinkin some beer and smokin... alot. When dinner rolled around I was a lil drunk and stoned and put the steaks in beer for about 10 minutes not even.
Then put it in A1 sauce for a little and put it on the grill. Throuhout puttin a lil more beer on it and A1 on it. And some spices.
It WAS... the BEST damn steak ever. I dunno if I was just not sober but it was good either way. Dunno what the beer did though tasted it a little. But it was awsome.

mmmmmm grilling. With grilling it's either using a rub, or a marinade. Here's my fav marinade for steak, sorry no measurements. Olive oil, Worcestershire Sauce, red wine vineger, crushed garlic cloves, some soy sauce, sliced onion, and cracked black peper. Marinade overnight or longer and cook on the grill.
As for rubs, i ususally mix up the regular stuff (garlic powder, onion powder, salt, pepper, brown suger and so on.
I also really really like the Emeril rubs. Try out the chicken rub, it's freakin awesome. I also really like his fish rub on mild fish like tilapia.[align=center]I was gone for a while and now I\'m back. :jointsmile: [/align]

Marinate chunks of lamb in lemon juice, plain yoghurt (should be live-culture for best results), spicy brown mustard, crushed fresh garlic cloves, salt and a touch of sugar, and cracked cumin seeds.
Leave them overnight at least to tenderize- the yoghurt does the trick- grill on skewers, enjoy.

Basically only got one recipe, but it is for chicken or any type of vegie ya wanna grill. Get a big bowl, stick your chicken, or vegies in it (mushrooms are great this way too) And then pour a bottle of italian dressing and let it marinate for as long as ya want, the longer the better
