You know you are lucid dreaming the second you recognize that you are asleep. You don't experience anything in reality; everything you see, hear, feel, taste and smell is inside your head, and you are conscious of this. Once you realize you are dreaming, and get used to the idea that your expectations of the world around you are molding your sensations, you can literally experience anything you can imagine.
