If it's not too bad to cook with, you could use it in ton of sauce/soup/stocks etc..When used in a mirepoix, it could end up in pizza sauce, or clam chowder. I've never cared for raw celery, but you just can't cook without it. It's a great aromatic. :thumbsup:
