The fact that thc isn't water soluble means you don't lose any of it when it's being filtered through the bong. Yet you do lose a lot of nasty toxins. However, thc IS a tiny tiny bit water soluble, however, water only touches the outside of the bubble, you're not even going to feel the difference.
And your forgetting something. The rip, the carb, the rush.
With bongs, you can force a chamber of smoke deep into your lungs, not only is it filtered so that it' doesn't singe your lungs/throat, but it's traveling very fast, very condensed. Like a mini gravity bong. And most of us know the different between a joint and a gravity bong hit...
