How early can you top the plant? Can you keep topping and getting more and more branches?

Well,
How early will depend on the size light you have. Since the larger the light the faster the growth. 150watter you may wait a month or more before the first top while a 1000watter which I use may be top at about two weeks or so. While in the vegation stage you can top mulitple times. Remember the bigger the light the faster the growth.
