Well it's not evaporation you should worry about. The leafs can even absorb the water as it evaporates to some point. But the peat moss is a good idea because it will stop alga from growing on the top of your soil. So for that reason it's a very good idea.

You may want to add some bone meal or some worm casting or bat shit from time to time. If you are early in veg you can add some fish shit to raise the N level or bat shit. It sounds like you are growing organic and that's fine. It's slow but that is good too sometime. Just don't make the plant work to hard for nutrients.
