I thought there were no trichromes on stems. Wouldn't that guy just be getting vegetable matter? If it's just veggie matter, would it have any THC in it?

Yup, there are!

Bud will leave sticky tri's on any stems they've been in contact with.
You'll get the most stem tri's on the Donkey-Dick stalks (the main top buds).
