I break off a semi-large piece of a nug and put that in the bottom of the bowl so no shake or smaller pieces gets pulled through, like Bob said. Then I just break up a nug into smaller pieces and put those on top of the larger one. Pack it tight, but not too tight or it won't burn well. I've never smoked outta an apple, so I can't help you with that. :rasta:
