There are several ways. You watch the plant very closely and if you see male pods you pick them off careful not to pop them. I have a small vacuum I have used to suck them off when I cut them so if they pop the pollen gets sucked into the vacuum and no problem.

Hermies are not the end of the world. There is no good reason to trash hermies if you treat them right you can still get a good crop from one. You just need to watch your plants and take care of them.
