Intresting question and not that easy to answer. There is more then one way to look at this question.

The only true way to know when to harvest is to view the trichomes with a 10x to 30x microscope. Mature trichome looks like a golf ball sitting on golf tee, big and round on the top. The color is clear to cloudy. Cloudy is peak for that trichome. Because there are millions of trichomes you need to harvest on the average. They will continue to mature through the drying process for a day or more. Amber color is past prime for that trichome so you are just looking for an average.
This is a short cycle resin producing plant so that means in nature it does have a shelf life so to speak. If you do not harvest the flowers they will die off for the most part. The THC will degrade and weaken in potency. You can harvest the flowers and then put the plant back into vegetation cycle and it will grow flowers again with THC.
The flowers have a shelf life during growth but the plant may not. Not counting clones that share the same age of the mother that is. I am not sure how many times you can harvest then re-vegetate a single plant. That could be a fun experiment to plan somebody should do it. I assume if you keep the cycle up and give quality lighting and nutrients with proper flush cycles you could get many years from one plant.
Cloning is a safer bet and faster too but that was not the question.

Does that mean, that it's like uhm.. an apple tree or something similar? I mean, it gives fruit, and then (in nature when not touched) they just fall of, and the leaves fall off as well, then they just grow back?

would the buds do that?? fall of, and then some weeks or months just grow back??

Isn't it a cycle of life?? grow and die?

No not for a resin producing plant.
The flowers are not fruit big difference there.
You need to harvest the flowers and there is a point when the THC all turns amber and the quality degrade.
The flowers must be picked at maturity for best results. In this type of plant light triggers the flower cycle so to re-veg you need to switch the light cycle back to 18/6 or better to re-veg them
