first time grower what is easier soil or hydro?

I am geting ready to build a stealth cabinet. Can I still do a screen of grass with soil pots instead of hydro? I do not mind if it takes a little longer just so it can be done. I want to try simple the first time then experement anfter that.
Also instead of buying seeds to se while I am practicing, if I just used old rag weed seeds but grew it as sinse would it improbve any?

both are easy if you give them attention.. soil is definitley less work if you have done your homework,,,
