What should I do with plants with no crystals ?

Hi-

I have three white widow plants that never really crystal-ed up in week 9. They have big leaves and buds, its just all still super green...no powder. Is there THC in the green matter that will still get me high if I dry it out and smoke it ? I plan on giving them another two weeks. I"m pretty sure I know why this happened...bad humidity, low light watts 350 HP, and no grow tent....just growing plants on table with light han
