Actually; You do not break up the root ball, but actually gently break up the ends of protruding roots. If you broke up the actual root ball. The plant would die off.

As G'Mama said; Gently. Both ways work. If you are going into a big pot; Breaking up the outer roots will allow the new roots to grow up and out giving you more root mass, and less wasted medium/soil area.
