Plants look good. I would get rid of that metal siding though and use a dark mesh material around the sides if concealment is a problem. That metal is going to get hotter than shit in the sun and make that garden much hotter than it would normally be. Plus you want as much air circulation as possible.
Generally if you over water the leaves will give a claw appearance. If its under watered the leaves just get droopy.

Living in a desert, at about 6300' elevation, with temps averaging about 90'ish with relative low humidity and the "soil" typical desert, is it possible to "over water" my girls? I usually water in the evenings right before sunset and give em a good soaking, sometimes even in the AM depending on how "dry" the soil looks, I may water then also AND in the evening. They seem to be doing well, each are about 5' tall, a healthy green. Rating: 5
