I'm sure there are some who would disagree with me, but I have done what you're talking about several times. It works just fine, go ahead and take it off. Plus, yes you can get roots out of it as a cutting, it shouldn't take too much longer than normal, but it could, just be patient. Also if you cut it off at a bud site, then yes that will become the new top and the plant will focus energy there. How dominant of a cola it becomes depends on what stage your plant is in, if its nearly done stretching or slowing down on the number of flowers its making, and focusing more on swelling up the flowers it has.. then it likely won't stand out as a dom. cola simply because the time to grow isn't available anymore.
Again, people may disagree with me, but thats my thoughts on the subject. I suggest you go ahead and cut that top off. Its better to have more stress earlier on and all at once, than have constant stress throughout the whole growth until harvest, at least as far as my experience tells me. Good luck brahhh.
