However, what chapped my ass over the organ donation was reading about an organ transplant that was on paper as the wish of a dying man. He wanted a particular person to have the organ. The medical provider said no because of MMJ usage. The organ then went to someone else. Then man then died because of the decision.

If it was my mothers or fathers wish that someone SPECIFIC be saved as was the case here and some administrator made a decision to give the organ to someone else and they died, the admin has to die for disrespecting my family. No questions asked and that is the same thing the jury would hear from me. I would not feel remorse or sadness over the loss of the admin or sympathy for his family. If he is an asshole then they are probably assholes too because the apple doesn't fall far from the tree.
