Might just be the genetics some phenotypes may not turn purple. Some wait till the last week or so of finishing to change also. Cooler night time temps and flushing will help. Out doors some plants that aren't bread for color will turn purple when temperatures get close to freezing. I think I would worry more about producing good medicine then the color of it. Take cuts and notes and give it a few runs.
