I've been a chef for like 17 years and a butcher for about a year. When I got into retail meat cutting I realized how regulated animal flesh is. On the raw end we have to be "C.O.O.L. compliant" (country of origin labeling). Meaning that pretty much every peice of raw meat (some fruits and nuts too) must always be accompanied by a sign stating where it came from and if it is farm raised or wild, fresh or frozen. A violation can be up to $1000 per item(more for fish and more still for shellfish). They are up our ass about this shit non stop! We document shit from where the animal was killed to when you check out with your club card. Word. I wondered when they were gon start crack'n down the edible situation.
