I have some surgery being done and am doing the last minute tasks before being set to be in bed a month.

Canna- caramels were low...and will be a staple of recovery medication. With two other batches already made, with improvements on the 2nd batch I decided I'd commit 5 cups of cleaned cannabutter and make huge batch.

1st run came out great. 2nd run even better as I'd substituted "sorghgum " a corn syrup/ molasses mix for part of syrup and doubled almond extract.

Today...in a rush (as much as stirring for five hours, can be rushed), with quality sleep deprivation....when I got to the magic 245 degree's I rejoiced and started into pouring process. (new molds/ portion methods attempted) and grrrr...forgot to add flavorings and salt...

Recombined some and mix flavors...but...grrr...not really effective.....
Then wondering why so dark, and I see that I put 2x concentration of molasses as I'd wished to do....

So....I now have 5 batches of Canna-Toffee. Darker, not as sweet...

still edible (and judge the strength another time, when have portion vs tasting, cleaning spoon) but was a disapointment and to have (mis) made so much.

--------------

Challenges of portioning continue. I am too exhausted in this moment to deal with stuff any more.:smokin:

Oh well, the science of cooking/ learning continues
