It's not the copper killing your plants. Copper piping gets much more acidic and basic stuff running through it all the time and it does nothing.

It's the added anti-corrosive chemical added to the copper that is leaching out and killing your plants.

Copper is an essential plant nutrient and one of the hardest ones to lock out or overfeed by any means.
