Keep an eye out for nanners. Especially if prone already.
Over-ripening is one of the techniques used to force hermaphrodism, but you've chopped the mainstem...which is pretty friggin stressful and might force nanners regardless. When you wait till the trichs turn rusty, (amber) the plant starts to panic at the end of her life cycle, and self-propogates. If you let the plant go that far, you risk over-degredation of the THC. Know what you are doing and why, before doing anything.

Do yourself a favor, and only freeze one. Jumping into a technique you've never tried, likely you will step in some shit along the way.

If there's any moisture left in the buds, the moisture will turn to ice. Ice expands and breaks-down cells. Not just the trichomes, but the whole plant's celular structure. When you unfreeze, chances are fairly good that you might end up with a pile of mush, especially if you've rushed the drying/curing process.
