Late Hours?
Well, no shops can be open past 9:00 PM now, so that's the latest you'll find in Denver proper.
In other localities like Englewood or Lakewood, there might still be a random 24 hour place or two. I know that Nature's Kiss on S. Broadway/Quincy is open until 10 every night. I'm normally in the actual Denver shops though, so the ones that I know of that were 24 hour are now 7 am-9 pm.
