Tips:
You have to keep stirring after it boils
It does not look right until right before the end

Note if you are making pops by my recipe, you must not stir at all after the mixture is throughly mixed or you will start crystalization prematurely.

The difference is I use honey as the menstruum instead of butter.

I have never seen clear candy using butter, but it is relatively clear with honey.

The honey does change the hard crack candy to haaard taffy, which can seal patients mouths for awhile or pull dental work, if you bite down hard on it.
