it will take a little bit for the plant to recover from being chopped. it has to repair the places that you made cuts etc. it should pull out of it just fine. also, you shouldn't have to worry about mold or anything if you don't have high humidity. and they shouldn't die off either as the plant is still living.

i would give them a couple of days to see what happens. worst case scenario is that you chop them in a few days with no additional growth.
