Test a few different spots on your plant and if one part of your plant is at the right ripeness for your liking, just take that portion of the plant and let the other part run a little longer. Tons of people do that.

i know a lot of people that like to chop when they are all milky, seeing as it's white widow, they want it to actually be white. again, personal preference.
