i'd say hit them with the nutes. a nitrogen deficiency will show first in the older leaves. they will turn yellow and possibly die. they've been alive for almost three weeks with nothing but water and the food stored in the cotyledon.

your pH does sound a bit out of whack. when was the last time you watered? you might want to check on the roots. they aren't rootbound are they?
