Get a jeweler's loupe with 10x & 20x magnification, so you can see the trichomes clearly. I won't go into the different highs based on when you harvest, you can find that elsewhere, but they should be totally mature when 2/3 to 3/4 of the trichomes are milky white and some are turning amber. Also once about 75% of the hairs have turned from white to orange (depending on your variety) is also a good indication of maturity.
