Sorry I had to after you said quail hahaha... And by the way, just because a fish has a lot of bones does not mean it doesn't taste good. Up here in the lakes, 50% of the time you'll catch pickerel/walleye, 30% you'll catch jackfish/pike and 20% is little perch. The walleye and perch are both easy to fillet and taste great, but most people throw back the jackfish because it has so many little bones that it takes forever to fillet it. Most people assume it also taste bad.. not the case. You just have to a) know how to fillet and b) know how to cook, and you can't tell the difference between jack and pickerel. It's probably the same with carp over there.
