It's AFTER the plant has been killed that the breakdown process you're talking about begins.

light, heat, oxidation are all enemies (or friends, if you're making compost) of dead organics.

store cool, (I freeze for long-term storage, which has it's own issues) dry, and dark. vacuum sealing is recommended, removing the oxygen.
