A lot of times some buds will mature faster than other buds on a plant so it's really hard to say harvest when the hairs change color, you need to get more into it and get a microscope to see the trichomes so that you know when it is truly ready to harvest. You can get one at any radioshack for like $12.....

On another note, you can pluck buds as it matures but you also have to take into consideration for best taste you need to also flush the plants before you harvest the buds....If it really bothers ya that much you could always wait for the buds at the top to mature more and let the bottom buds do a little catching up, then you'll most likely have 2 phenotypes off one plant! You could have your main colas be your "couch lock" and the bottoms buds be more of a trippy/uplifting high.

Also, how long have you been flowering them and is it indica, sativa, or a hybrid of both? These factors can also help determine roughly the time your plants should be in flower before they are ready to harvest!
