Is it possible to dig them up??

Would it be possible to dig a few of my plants up and finish them inside???They are fairly large. About 5-6 feet...BUT I have a few that are smaller too. Do you think this is do-able??? The weather here will only reach the low 60's for the rest of the month. It seems I need more time with them. The seeds came out of a bag I bought which was not a good idea I am learning. I have not grown in 10 years. Would like to find a seedbank for next year. How big would the root balls be????Tell me what do ys think of doing this. I really thought I would get an OZ per plant but now I am thinking I will be lucky to get 1/4 per plant dired. I have 13 plants. Oh and yes and a few of them are turning purple. Boy I am bumming out here.
