Ideally, start in really small pots, like 3", until the plant gets a bit rootbound, and then repot to a SLIGHTLY larger size. This will actually help you in a small space. You'll find that the plants will actually fill those pots a little too soon with roots.

If you are using peat moss, you need lime in the mix. Peat moss is wicked acidic. Lime will take care of that.

Problem: my closet floor is less than 2 foot square (19.5" X 22.5) and things are pretty cramped as it is.
