Tomatoes and tomato-based sauces and soups should be brought to a correct pH (pretty acidic) if they aren't already and canned in a pressure processor. Balsamic vinegar is nice for that and adds a richer flavor than other vinegars.

CANNABIS, however, goes great in the mason jars but if you are in a humid area, leave the jars right next to an air conditioner or dehumidifier during the 'burping' or preliminary curing process to make sure they get dried out right before jarring up.
