i need help with my breeding program

i searched the forum for producing seeds but couldn't really find an answer for my specific question. heres a background on what has gone on.
i started 5 seeds , 2 afghanixpurple kush, and 3 sweet tooth.
the afghanixpurple kush turned out to be male, and 2 of the sweet tooths female. i kept the shorter, bushier, and all around better looking male.
well i allowed the male and females to continue to flower indoors with a baggie tied around the male flowers thinking that i was being very careful not to allow any pollen out. well some did get out and i have seeds developing on the sweet tooths, which are clearly 2 different phenotypes. one short and dense and the other long and lanky
i collected some pollen to use on a bella chaio and a white widow.i returned the sweet tooths to veg with the intention of putting outside soon. the plants are re-vegging with one bladed leaves and shoots coming out of where the buds were.i can seed the seeds pods swelling and have taken a few out to see whats goin on in there. some are starting to get dark so im thinkin all is well. my question is....
how and when to i collect these seeds? do i wait till september/october when the whole plant is mature?
if not do i need to dry them before i plant some?
