i would not worry about the peatmoss.
compost manure and perlite will be great, if you can find some earth worm castings, humus or regular top soil to mix in that would be great also, i would mix the compost manure at about 70% and perlite at about 30%(you will always want atleast 30% perlite or something comperable to aerating the soil. depending on how much you have depends on how much you water, more=more water, more=healthier well drained roots). if you can find the extra ewc or humus i would add at equal amounts to the compost manure and still have atleast 30% of the mix perlite. you need about 3.75L per foot of plant. growing outdoors in the mid east i would think you should look more into sativas with the hot maybe humid air. indica type plants grow more compact dense buds that are more prone to disease in those conditions.
