veggie curry
1- 1/12 cups coconut milk (crazy or not)
1 Bellpepper
cut green beans
1 sweet potato
zucchini
summer squash
1/2 onion (more or less depening on size)
2 cloves of fresh garlic minced
good curry powder (be carefull some of the crappy ones have msg)

rough chop all the veggies about the same size (i like BIG honkin pieces)
olive oil in a pan. get the onions and garlic going on med low w/salt. when they are soft turn up the heat and put in the sweet potatos, bell pepper. sweet potatos take a while so add a little water to the pan, and cover it for about 10 minutes remove the cover and boil away the water. now add the rest of the veggies, the coconut milk, and the curry powder LOTS of curry. Right now it looks like weird yellow funky soup. simmer for about 5-10 untill it starts to thicken. Salt and pepper to taste, mabey a bayleaf. serve over rice.

other additions
want it spicy, a couple shakes of red pepper flake, and cayanne will kick it up.
I love curry, almost ANY veggie will work.
