Would a female calyx have a 'seed' (or seed looking) inside?

Yes. That is where seed is developed after pollination.

inside a female calyx is a seed that shoots out the pistiles? I fear maybe I stressed it, or maybe this is all normal and I am being paranoid?

A calyx will send out the pistols. These pistols catch the pollen, which will then form the seeds. The seeds do not send out pistols.
