Any reason you're saying 5 min. at 325 degrees? Have you tried both?
Actually, I used the 200F for 20 mins method and I thought it worked great. After I posted my results, Master Wu tried 200F for 20 mins as an experiment, and he said he didn't think it worked as well as 325F for 5 mins. So I'm basically passing on his results without trying them myself firsthand. If you are more comfortable with 200F for 20 mins, try that --- it worked well for me.
