It's worth bearing in mind that the pan & bowl method is the trickier of the two methods to master (the crockpot is your friend!), however, if thats the route you choose.. make sure you a). keep the temp up high, and b). give it plenty of time to work its magic.

Rule of thumb.. a minimum of 1 hour on a 'high' heat (2 hour max) for the initial extraction.. (N.B. requires constant monitoring to avoid burning).. then follow with 3/4 hours of simmering.

Try a test batch when cooled.
If it lacks a 'kick'.. try a reheat.
