Eating right and staying healthy isn't as hard as everyone thinks. The problem is that there is TOO MUCH VARIETY out there and people have a hard time saying "no" (which I can understand, it's out there so why not eat it, right?).

If you keep a baseline diet that you only go off of for special occasions, or for a once-a-week cheat day, you'll be fine. I should know... I used to weight 355lbs, I am now 205 with a good amount of muscle... and oh yeah, I've kept it off 12 years just by sticking to the theory below:

Six small meals a day....

Two or three of them should be the same: brown rice, chicken / turkey (white meat), vegetables (3/4 cup brown rice, up to eight ounces of poultry and all the veggies you like) - garnish with a tablespoon of your favorite "light" sauce (I use PC light peanut sauce). If you batch cook once a week and freeze, it's easy.

The other meals should stay basic: fruit / granola / no fat yogurt for dinner, liquid protein for breakfast (ISO XP rules, but mix it 3:1) and augment throughout the day with fruit, protein bars and whole grains.

Never eat white anything (rice, bread, etc)!!
Never eat meat after 5pm!!
Cheese is the devil!!
Drink 8+ glasses of water a day!!

And if it's loosing weight you're going for your workouts should be 80% cardio, very little weights and should last in the 45 minute zone at least 4 times a week. If you can work something into your lifestyle (like riding a bike everywhere) it won't hurt as much.
