This is one of my favourite desserts so I thought id share my recipe with you.

Serves 4-6

You will need:
100g self raising flour
100g softened unsalted butter
75g white caster sugar
25g dark muscavado sugar
3 tablespoons of golden syrup
2 large eggs
Juice and zest of half a orange/lemon (depends what taste you prefer)
Pinch of baking powder

Method
1) Grease and flour a 1L pudding dish.
2) Combine the juice and zest of the orange/lemon with 2 tablespoons of the golden syrup and place in the bottom of the greased pudding dish.
3) Place the rest of the ingredients including the 1 tablespoon of golden syrup in a bowl and mix with electric beaters until a cake mixture is acheived (there is a longer method for making a cake/sponge but results do not vary much from this method, which is a lot easier). Place this mixture in the dish on top the the juice and syrup mixture.
4) Cover the dish with greased foil and curl up at the edges until it is as tight as you can get it around the edge of the dish.
5) Place the dish in a large pan with a tight fitting lid. Pour boiling water down the side of the pan till it reaches halfway up the dish. Place the lid on top.
6) Lightly simmer for 1 1/2 hours.
7) Remove the dish from the water and rest for 10 mins. Turn the sponge out onto a serving plate and cut into portions.
8) Serve with good vanilla ice cream and/or your favourite sauce.
