I just saw a bunch of under the cabinet xenon lights , 20 watts per light, and they only cost about $20 for 3. They're supposed to be a lot cooler than other lights too in terms of being able to touch them. The glass that covers them is uv protected so that wouldn't be a problem and you just plug it in like a normal light so wiring isn't an issue.

I was thinking of getting a bunch of them since then I could have light all over the place in different areas of the cabinet.
